Savory Baked Ham

Preheat your oven to 325°F, then make the ham glaze. In a small bowl, whisk together 3 tablespoons of Dijon mustard, 2 tablespoons of olive oil, 1 tablespoon of Worcestershire sauce, the zest of 1 orange or lemon for a sharper flavor, 1 teaspoon of minced rosemary, 1 teaspoon of dried thyme leaves, 1/2 teaspoon of garlic powder, 1/2 teaspoon of black pepper and a pinch of smoked paprika.

Let the ham come up to room temperature for about 2 hours so that it cooks evenly in the oven. Once the ham is at room temperature, remove all of the packaging and apply a light coat of the glaze to the ham. Cover the ham tightly with heavy‑duty foil and bake for 75 to 90 minutes, glazing twice during this covered cooking time. Remove the foil, glaze once more, and return to the oven uncovered for the final 30 minutes to allow the skin to develop a rich, caramelized crust. At 325 degrees, you can plan on cooking for about 15 to 18 minutes per pound. Once the ham is out of the oven allow it to rest for 15 to 20 minutes before serving.
